Coffee Cake







Every summer growing up I attended summer camp in Missouri at Kanakuk. I loved camp & getting to see my friends I only see once a year, but one of the other things I looked forward to most was this coffee cake on Sunday mornings. My favorite part about it; the crumbly cinnamon topping. This recipe has been used every Sunday morning at Kanakuk Camps for over thirty years, & lucky for you, I have the recipe.

Ingredients:
2 eggs beaten
2/3 cup margarine, melted
1 1/2 teaspoon vanilla
1/2 cup milk not evaporated milk
3/4 cup water
1 3/4 cup sugar
3 cups flour
2 1/2 teaspoon baking soda
1 teaspoon salt

Topping:
1 cup brown sugar
1 teaspoon cinnamon 
1/4 cup flour
1/4 stick softened margarine

Instructions:
Beat eggs. Add margarine, vanilla, Milnot evaporated milk & water. Combine dry ingredients. Add to liquid mixture & beat until batter is smooth. Pour batter into a greased/floured 9x13 baking pan. Mix topping ingredients until crumbly with a fork. Sprinkle topping on a cake & bake at 350 degrees for 40-45 minutes.
