Lovely Wednesdays: Healthy Chicken Tacos

One of my New Years resolutions is to cook at home at least once a week. Although this is a work in progress, I'm hoping to make it 2-3 times a week when it's all said & done. So the other day, I was searching through our Weight Watchers Cookbook & came across this chicken taco recipe. It's such a simple recipe & everything is fresh {which I love}. There's only 8 g of fat & 24 g of protein in 2 tacos! It's perfect for a new, healthier you. If you're craving chicken tacos and want a mouth watering yet healthy option, this is it. I even added a little fresh jalapeƱo & left out the sour cream since I'm not a fan. I've also included the nutritional facts below FYI. 

Serves 6
What You'll Need:

4 skinless {5 ounce} skinless boneless chicken breasts
2 teaspoons Mexican or taco seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper
12 {6 inch} corn tortillas, warmed
1 large tomato, diced
1 avocado, halved, pitted, peeled & diced
1 small onion, thinly sliced
1/2 cup coarsely chopped fresh cilantro
1/2 cup fat-free sour cream

1.    Sprinkle chicken with Mexican seasoning, salt & pepper. 

2.    Spray ridged grill pan with nonstick spray & set over medium heat. 

3.    Place chicken in pan & cook until browned & cooked through, about 6 minutes per side. {I   actually cute the chicken into strips before cooking them to make them cook faster}.

4.    While the chicken is cooking, start slicing & dicing your tomato, avocado, onion & cilantro.

5.    If you cook the chicken whole, tear chicken into long thin strips after it has cooled.

5.    Top each tortilla with one-sixth of chicken, tomato, avocado, onion, cilantro & sour cream. 

6.    Fold tortillas in half & you're ready to eat!
