What is better than the smell of warm cookies baking in your kitchen? Very little in my opinion.
So, for this weeks {Lovely Wednesdays} post (sorry it's a day late!) I'm sharing a tasty pumpkin cookie recipe.
I've been wanting to make pumpkin cookies for quite some time now & came across this simple yet delicious recipe. Baking from scratch always seems to taste better & unlike pre-made mixes, you know exactly what you're putting in your body.
I've been trying to get in the kitchen more with both cooking & baking. The only time of year I ever really bake is around the holidays. This usually consists of my sisters & I helping my mom bake (& eat) her infamous, triple layer chocolate cake.
Thanksgiving is one of my favorite holidays, consisting of eating our traditional Thanksgiving breakfast while watching the Macy's Thanksgiving Day Parade, cooking, more eating & spending some much needed time with family. This year we will be celebrating at our lake house in East Texas.
I have tried to be thankful for something specific every day this month, and today I am thankful for cool, fall weather & these mouth watering cookies.
Cookie Ingredients:
Yields 36 Servings
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup butter
1 1/2 cups sugar
1 cup pumpkin
1 egg
1 teaspoon vanilla
Cream Cheese Frosting Ingredients:
3 oz cream cheese
2 tablespoons butter
2 cups powdered sugar
Cookie Directions:
1. Combine flour, baking powder & baking soda in a bowl.
2. Combine sugar & butter together in a mixing bowl, mixing the two together to create a creamy base. Slowly add vanilla, egg, pumpkin, nutmeg & cinnamon.
3. Keep mixer on low, slowly combining #1 with #2.
4. Roll cookie dough into balls and place them on a greased cookie sheet.
5. Bake at 350 degrees for 15-20 minutes (dough may not seem thick).
Tip: Stick a toothpick in cookies to see if they are ready or not. Clean toothpick means they are ready. Dough on toothpick means they are not ready.
Cream Cheese Frosting Directions:
1. Combine cream cheese, butter & sugar in mixing bowl until it is creamy.
(So easy & tasty!)
2. Spread cream cheese frosting on top of cookies.
